Homemade Banana Loaf

This is one of my all-time FAVOURITE bakes, considering its so easy to make and it tastes amazing! Bananas are my favourite fruit, but there has been many times that they have been left to become a little too ripe and have began to bruise. You may be inclinded to throw these away but they are the key to this delicious banana loaf.
Of course you can use any banana but to achieve the best taste and sweetness, overly ripe bananas are the best.

I have adapted a recipe from https://be-ro.co.uk/index.html to create this beautiful loaf cake. 



Ingredients

- 75g baking margarine
- 175g caster sugar
- 2 medium eggs
- 225g self-raising flour
- 1 teaspoon ground cinammon
- 1/4 teaspoon baking powder
- 4 overly ripe banana






       Method

  1. Preheat oven to 180 degrees C/350 degrees F/Gas mark 4.
  2. Cream together the margarine and the sugar in a bowl, using a wooden spoon or an electric mixer, until light in colour and fluffier in texture. If you are using a wooden spoon let the butter soften in advance so that its soft enough to mix together.
  3. Peel the bananas and mash them up in a separate bowl using a fork or a potato masher, then add to the margarine and sugar mixture.
  4. Mix together the flour, baking powder and ground cinnamon in a bowl until well combined, then beat together the two eggs in another small bowl or a mug.
  5. Gradually add the eggs to the margarine and sugar and then begin adding in the dry ingredients. Stir slowly so that the flour doesn't spill over the side.
  6. Once all of the ingredients are combined put the mixture in a pre-greased and lined loaf tin and place in the oven for 1 1/4 hours. Keep a check, the result you are looking for is for the loaf to be golden brown and for a skewer to come out clean.
Can you believe its that easy to make? The only down side is it takes a while to cook, but every minute is worth it! Best served warm with a hot beverage of your choice, and its at its best on the day its made.

Alternatives
 
Why not try add some chocolate chips to the mixture to add extra flavour? Chocolate and banana makes an excellent flavour combination.
Or why not drizzle some cinnamon icing on top? Simply stir some icing sugar, a sprinkling of cinnamon and a dash of water together and drizzle on top of the loaf when its fully cooled.
